Wood Ducks at Burnaby Lake. (And a Mallard trying to steal the show)Yes the wood ducks are real ducks. They have such vivid colours and almost look painted.
We made it as far as Burnaby. We are at the BCRV Campsite and waiting for taxes to be done with. I picked this place because it has an indoor pool and hot tub. Not quite Palm Springs yet, but at least we have the annemities and are close to Abbotsford

We spent Saturday at my cousins, Ernie and Joni's, and I made my famous ribs. Everyones asking me for the recipe, so I thought I would post it here.

First you have to make a rub. Here are the ingredients.
2 Tablespoons brown sugar
1 Tablespoon paprika
1 ½ teaspoon garlic salt
1 ½ teaspoon onion powder
1 teaspoon lemon pepper
1 teaspoon ground white pepper
¼ teaspoon celery seed
2 racks of pork back ribs (4 to 5 lbs total (2 kg))
Keep back 2 teaspoons of the rub mixture for the sauce.
Put some soaked wood chips in some tin foil and poke holes in the top. Put packet under the grates and put barbeque on low on the side only with the wood chip pack. Put foil on the grate to deflect the heat. Rub the ribs with the rub and put ribs on the top warming rack. The object is not to cook them at this stage, but smoke them and warm the rub into them. 2 hours minimum, 3 hours best. About 225 degrees. If it's winter you can do this in the oven without the wood smoke.
While they are on the barbeque make the sauce.
Mix in a sauce pan
1 bottle of commercial barbecue sauce
I use Bullseye mesquite smokey
¼ cup apple juice
2 Tablespoons honey
2 Tablespoons brown sugar
2 teaspoons rub from above
Bring to a gentle simmer, about 10 minutes.
Let the sauce cool before using.
Next lay down 2 sheets of foil for each slab of rib.Place the rib in the center and fold up the sides to hold liquid.
Now half the following and put on each slab.
1/3 cup butter
1/3 cup brown sugar
1/3 cup honey
½ cup apple juice
Put a double layer of foil on top and seal.
Bake in the oven at 290 degrees for 2 hours.
When you open them, the meat should be shrunk back from the ends about 1/4 inch.
Take the slabs out of the foil and put on the barbeque on medium high. Baste with the barbeque sauce and cook untill browned as in the above picture.
Again, if not using a barbeque, broil in the oven.This picture shows the end result.
